I hope you all had a wonderful weekend!
Today is going to be a slightly different post - it’s the day I reveal my foodie penpal!!
Now, you might be wondering, what the heck is a foodie penpal?? Well, it is a program that Lindsay from The Lean Green Bean Blog created where you are matched with another blogger or reader for the month. You communicate with them to inform each other of any allergies etc. and food preferences so they can make your box as personal as possible! You basically send a box of goodies to another individual in another state – a great way to meet other bloggers and readers! Click HERE to learn more – I highly recommend joining if you can
When I got home last weekend for my half marathon, I received this upon arrival
I was SO excited that I immediately tore open the box
Inside was a hand written note from Sheila from Pippi’s in the Kitchen Again (click to check out her blog!) and some goodies
In her note, she described the meaning of each item so I knew where it was coming from. I had just told her that I couldn’t have dairy and that I LOVE trying new, local items from different places – she did perfect!
She sent me Minnesota local wild rice and maple syrup. She also included a recipe that she makes all the time using both products. I cannot wait to try it out when I’m home! It sounds yummy!
The wild rice is from the Anishinaabeg people. Sheila has seen Winona LaDuke, a woman who is part of the tribe, speak an informed me that her talks cover a wide range of topics relating to food and land. The recipe she sent me for Mohnomin Porridge is one that she loves! She got it from Senator Al Franken who was one of Minnesota’s governors in the U.S. congress - pretty neat!
I really enjoyed the excitement of packaging my box for Niki over at Salt & Pepper and receiving this lovely box from Sheila.
I wil definitely participate in Foodie Penpals again for May
And just to leave you with some eats that I enjoyed these past few days while studying …

For a snack, greek yogurt and cottage mix with 1 TBSP unsweetened applesauce, walnuts, ground flax, and a few carob chips

Dinner: broiled haddock with homemade panko breadcrumbs, sauteed swiss chard, and roasted sweet potatoes

Dinner: Sauteed smoked paprika shrimp with steamed garlic broccoli and roasted left-over sweet potato
Off to review for tomorrow morning’s exam!

i can tell it’s almost lunch time because i definitely almost started drooling over your pictures of food! the last one, with the shrimp? looks AMAZING.
I literally just ate shrimp, broccoli, and sweet potato for dinner!
