An Awesome 5 miles and Some New Eats

Good Morning!

Today started out bright and early with a 5 mile speedwork run on the treadmill.

1 mi warm-up

3 mi with 1/2 mile pick-ups @ 7.2, 7.3, 7.4

1 mi cool-down

Followed by a strength workout with a friend :)

It was an awesome run and workout; however, it definitely kicked my butt and I was more than ready for some food when I got home ;)

I whipped up some “egg-oats” (new recipe coming soon!) and topped them with PB and Strawberry jam – PB&J first thing in morning anyone?!

Cannot wait to share this new recipe with you guys! I got inspiration from Tina over at Carrots n Cake. She loves her French Toast Breakfast scramble which always looks so yummy! I decided to give it a try this week and have made a few tweaks for myself. I’ll be sure to share them soon once I test it out once more :)

Last night’s dinner was definitely one for the books! Last week, I got a random craving for chicken parm which never happens! It’s not that I don’t like it (b/c I do), but I can’t eat the cheese and got really tired of tomato sauce for a while. Since I can’t eat “real” chicken parm, I decided to do an experiment with the cheeses I can eat and make a chicken “parm” that was both healthy and delicious!

It turned out being a success and tasted delicious! I’ll post the recipe later this week, but in the mean time, here’s a few pictures of our chicken “parm” dinner last night. It hit the spot :)

IMG_5491It’s time to get this day started! Off to work before I head to my first Ballroom Dancing Group lesson tonight :)

Question: Do you listen to and fulfill your cravings or try your hardest to fight them?

I’ve learned that if I satisfy my craving (“good” or “bad”) with a little of what I want, I don’t seem to want it as much as if I just kept ignoring it. It’s what works for me! :)

  2. I usually try and fight my cravings because I am “rungry” all of the time. UGH. Runner problems!
