Good Morning!
It’s Monday.… time to start a new week!
I finally had some time this weekend to get organized and ready for the coming week.
Out with friends on Friday to celebrate birthdays
organizing school things and homework on Saturday,
and a great 9 miler Sunday Morning followed by friends, food prep, and family – the recipe for a fun weekend
Sunday started out early with my pre-run snack before heading to the gym to run my 9 miler on the treadmill – it’s been WAY too cold, in my opinion, to run outside.
I headed to the gym and got in all 9 miles in 1:16. I felt great throughout the whole run. It was definitely one of the more awesome runs
When I got home, I whipped up some awesome, chocolatey, mocha oats (recipe to come) and an egg on the side.
Once I re-fueled, showered, and got ready for the day, I headed to meet a friend for coffee then came home and did a bunch of food prep while getting some homework done.
Oats for the week, Frozen yogurt trailmix bars, and tonight’s dinner of crockpot sausage and peppers (experiment)
I also cooked up some unpictured hardboiled eggs and quinoa for the week and baked some brownies for the party for the kids.
Later in the evening, we headed over to our cousin’s to celebrate another cousin’s 50th birthday. It was great to see everyone and catch up. Good times + Good Food = My family
After a few hours of chatting, laughing, and eating, we headed home. It was fun to see everyone, but it was also nice to get home and climb into bed. It was a fun weekend, but I was sure wiped out from it!
I was up bright and early this morning for a workout with Jess. She kicked my butt as usual! I followed the workout with a really, REALLY delicious bowl of eggs, oats, and a few other tasty ingredients!

I’m off to finish up some homework and run some errands! Ballroom dancing later today and teaching spin tonight. Cheers to a packed Monday!

I made the greek yogurt bars over the weekend too. They are yummy and the perfect snack!

That chocolate raspberry cake looked so amazinggg. I love that combination…or really anything with raspberries
