I hope you had a fabulous weekend!
I spent most of mine working, but I got a chance to relax with friends tonight. We enjoyed some homemade pizza and wine while watching the super bowl and the amazing halftime show! It was a nice way to wind down from the weekend and get ready for a hectic week ahead. I’ve been beyond exhausted lately, so my planning this week includes lots of quick meals that can be made in minutes. Unfortunately, this week doesn’t include any fun experiments in the kitchen; however, I do have some new recipes to share throughout the week
Mom made me my FAVORITE winter-time soup today- Her pasta fagiola, or as I say it, pasta “fazul” .. tomato tomataaaa right?!
There’s enough for multiple meals this week, so I see it being numerous lunches and dinners since it’s been a struggle to keep my eyes open lately! Hello new semester!
Along with the new semester, Saturday is my fundraiser I’m doing for a friend of mine. Therefore, this week will consist of all the last minute details to make it one great day!
Meal Plan
Sunday: Superbowl – homemade pizza, old bay shrimp, and pick foods
Monday: Pasta Fazul
Tuesday: Leftovers from prep*
Wednesday: Leftovers
Thursday: Breakfast for dinner
Friday: wing it
Saturday: Out to dinner (day of the fundraiser)
Nothing special at all, but it’s still a plan with nutritious eats that will help me get thru this hectic week!
Workout
Monday: Ballroom Dancing
Tuesday: 6 mile tempo @ 8:14 (swapped easy week with last week) and strength workout with Jess; teaching spin
Wednesday: Strength workout out with a friend!
Thursday: 11 miles and teaching spin
Friday: Strength workout and 30 minutes cardio (machine TBD)
Saturday: OFF
Sunday: 6 miles hill/easy
Now that my plans are set, I’m ready to get the week started (I think…)

I have been so worn out lately. By Friday I am done. I wished that I had more energy going into the weekend!
Homemade pizzas is one of my favorite things to make for dinner. Also anything in the slow cooker because it is always yummy and has lots of leftovers. I love leftovers because I am lazy. I did make a yummy salmon for dinner tonight with green beans and baked sweet potatoes.
