As I’m packing up to head home from vacation at the beach with family, I’m stopping in to share my plan for this week. Even though I’m technically on vacation, I still took a few minutes to organize the week so the transition isn’t too bad after a fun week
Let’s get to it, shall we?
This week’s meals will feature things that need to be used up in our house – i.e. spaghetti squash, bell peppers, scallions, etc. Since we were on vacation, we pushed our CSA back a week so we’ll receive two shares next weeks! It actually worked out well, be cause it’s given us a chance to use up practically everything we’ve received!
Sunday: Friend’s going away party
Monday: Roasted shrimp with Quinoa Fried Rice and veggies
Tuesday: Gumbo-laya Stew over spaghetti squash for me and rice for the parents with spinach
Wednesday: out to dinner
Friday: Grilled Salmon with Nectarine Salsa and spinach pasta salad (recipe experiment)
Saturday: out to dinner/wing it
Not much prep will happen today, so I’ll take some time tomorrow to do it.
I’ve had some good runs and workouts this week that I’ll share with you later this week. In the meantime, here’s the plan for the week.
Monday: Teach spin, yoga, ballroom dance lesson
Tuesday: 4 mile speed work, strength workout with Jess
Wednesday: 30 minutes recovery cardio, strength workout, new ab class with a friend
Thursday: 5 mile hills, ballroom dance lesson
Friday: strength workout
Saturday: 8 mile long run, 15 minutes core work
I’m off to enjoy the last few hours of vacation before heading home!
