It’s Sunday, so you know what that means – it’s time for another weekly plan to make the upcoming week less stressful
I had an amazing weekend with my best friends from college and I’m finding it difficult to sit back and study the rest of the night. It has been way too long since we’ve seen each other, so it was really nice to be able to spend the weekend together like old times
Even though it was a GREAT weekend, I’m exhausted! Since I need to study for my test, let’s get right to the plan for this week!
Now that the weather is getting crisp and cool as the seasons change, I’ve been craving all things pumpkin! I’ve mainly been having pumpkin oats every morning, but I’m looking forward some fall baking I’m thinking some pumpkin cookies, bread, pudding, and anything else that sounds wonderful with pumpkin in it
Our dinners this week are quick and simple, bringing back meatless monday!
Sunday: Big make-your-own salads with grilled chicken (after a fun, indulgent weekend)
Monday: Mexican sweet potato and black bean boats with homemade salsa
Tuesday: Seared spiced sirloin with homemade enchilada sauce, stir-fryed pepper and onions
Wednesday: Leftovers + pasta
Thursday: Fish (flounder, sole, or cod, etc.) and veggies (whatever needs to be used up)
Friday: Out to dinner
Saturday: Sister’s house warming party
- baked sweet potatoes for tomorrow and roasted an extra for snacks
- washed and cut up fruit
- gilled up extra chicken for lunches this week
This week will be my last “long” run before my half marathon on October 13, 2013! Crazy how time flies – cannot believe I’m nearing the end of my training plan. October is right around the corner and is a big racing month for me – Atlantic City Half marathon on October 13, Army 10 miler on October 20, and a 5k in Hoboken on October 26. I will definitely be doing lots of icing, foam rolling, and stretching to recover from all my running!
Monday: Spin class (actually being the student!), strength workout
Tuesday: 6 mile tempo run, strength workout with Jess
Thursday: 12 miles and core work
Friday: Strength workout and dance lesson/classes
Saturday: 5 miles easy/hill
I love when I’m able to get my longer runs done during the week! Sometimes doing the shorter runs on the weekends is nice
I’m off to study before watching the Emmys!! (if I can stay awake that is..)
